  • 3 Tablespoons soy sauce
  • 2 Tablespoon shaoxing cooking wine
  • 1 teaspoon sugar
  • 2 teaspoon sesame oil
  • 1 Tablespoon cornstarch
  • 4 Tablespoons water
  • ¼ teaspoon ground white pepper
  • Salt to taste

Ingredients:

  • 2 Tablespoons neutral oil
  • 2 large cloves garlic, minced
  • ½ onion trimmed, peeled, and sliced thin
  • 1 red pepper, cut in half, seeded, and thinly sliced
  • 1 medium carrot, trimmed, peeled, and cut into ⅓”matchstick
  • 1 handful bean sprouts, 4 ounces
  • 1 handful of spinach, 1½ ounces
  • 3 scallions
  • 8 ounces fresh chinese egg noodles
  • Salt and pepper to taste

Marinated beef:

  • 8 ounces beef
  • 1 Tablespoon soy sauce
  • ½ teaspoon baking soda
  • 1 teaspoon sugar
  • ½ teaspoon cornstarch
  • 1 Tablespoon neutral oil

Garnish:

  • 2 Tablespoons finely sliced green onion

Instructions

Marinate the Beef Trim any fat and gristle from the beef. Cut the beef into small thin slices, about ⅛” in thickness and 1 ½” in size. Combine the beef, soy sauce, sugar, and baking soda. Stir to combine. Add the cornstarch and oil and mix again to combine. Cover and let the beef sit for an hour or in the fridge for up to overnight.

Cook the noodles according to the package. Set aside.

Make the sauce: Combine the oyster sauce, soy sauce, shaoxing cooking wine, sugar, sesame oil, cornstarch, and white pepper. Stir together well and set aside.

Make the lo mein: Heat a wok or large heavy skillet over high heat. Add the oil and beef and stir fry for 2 mins., constantly moving it around the pan. Next add the onions and stir fry for another minute. Then add the peppers and carrot, stir frying until softened, about 2 minutes.  Add the noodles and sauce.

Cook stirring constantly (a pair of tongs or chopsticks works well) for a minute or two getting the sauce to evenly coat everything. Add the bean sprouts, spinach, and scallions. Toss to get the vegetables mixed in. Taste a little and adjust seasoning with a little salt and pepper if needed. Transfer to a large platter. Serve hot.

Notes

*If the noodles do not come with cooking instructions, cook for 3 minutes and check them by tasting a strand. It should be just cooked through but still firm. If it tastes a little raw or too firm, continue cooking for a mother couple minutes.

*If you are vegetarian, substitute an equal amount of extra firm or fried tofu cutlet for the beef. You can also add more vegetables, like wild mushrooms or broccoli. Use a vegetarian oyster sauce substitute.
